Just been reading vindaloo recipe and it says you can microwave the spices instead of dry roasting. How long should you put them in microwave for?

Thanks in antisipation.

Hello Harry

It will depend upon the strength/power of your microwave and amount of spices you are roasting. I would spread it out on a plate, microwave on full for 2+2+2 minutes, moving ingredients around after 2 minutes. You know when the spices are roasted from the aroma you get. Be careful, it is easier to burn them in a microwave than when dry frying in a wok.

I'd stick to using a pan as I can't see the point of the microwave as you will be cooking in a pan anyway ?

I usually do them in a pan but thought it would be easier to stick them in the micro and leave them.
