Hi Mamta!
I love your website and tried the Microwave Dahi vada yesterday. They turned out real good. My husband was all praises for these dahi vadas. But when I told him they were not fried, he did not believe me! Now we want to try more of your microwave recipes, using less fat.
How can I see more recipes which are made using a microwave. When I try typing 'microwave' in the serch engine, it yields no results. Is there a list of Microwave recipes on your website that I can see?

I am glad that you find my website useful, thank you for your comments. More than half the credit for it goes to my daughter Kavey and her husband Pete, who set it up and run it.
I don't do much cooking in microwave, Kadhi dahi pakoras and vadas are an exception. I find that the food cooked in microwave doesn't generally taste as good as the food cooked conventoionally. I believe that Neeta Mehta has written a book on the subject, you might consider trying it.

Thank you so much Mamta! I will definitely try and get a hold of Nita Mehta's book. I agree with you about the taste of food cooked in Microwave, I just want to experiment with someone's tried and tested recipes.
Again I think your website is very nice, very well arranged, easy to surf and some great recipes! A really good job, and most recipes remind me of my mom's cooking, who is in India. I miss her and her great cooking.

CARAMEL MICROWAVE CUSTARD
Based on 650 Watt Oven
4 cups of Milk -- any of the following combinations/options
4 cups Homo, or
4 cups comprised of 2 1/2 cups Half & Half --10% cream + 1 1/2 cups Carnation Evaporated Milk, or
4 cups comprised of 2 1/2 cups 18% + 1/2 cup Evaporated Milk, + 1 cup 1%
All the above options work but not all cream -- curdles. My preference is option 2 or 3.
5 large eggs
4 tablespoons sugar (or to taste)
Vanilla essence and grated nutmeg
Rinse an 8 inch microwave dish -- leave a tbs. of water or two in it. Sprinkle with 1/4 (1/8th works too) cup sugar, more if you like. Swirl pan to dampen sugar. Should resemble very wet sand but should not be liquidy when you swirl the pan. Zap it at 4 minutes on HIGH. Watch it after 3 minutes though. Swirl it to ensure the caramel coats the pan.
Cool while you make the custard.
Whip eggs, milk, sugar, vanilla. Strain for a nice smooth custard. Add grated nutmeg. Pour the custard batter over the cooled caramel. Wait a couple of minutes till the bubbles subside. Cook for 11 minutes (not more) MED HIGH. The center (a 3 inch diameter) appears slighly jiggly/soft -- don't worry it sets while it cools.
