Hello Winton
The Apricot Chutney jar that you brought for me is delicious, almost half gone already. I did not lave it to mature! Thanks :-).
If you would like to share the recipe with everyone, please send it via the contact link.

Thanks Mamta, glad you are enjoying the chutney. Not totally surprised it turned out well as it is your recipe, which in turn is based on your father's, plus a bit of beginner's luck on my part!

The only changes were, if you want to add any to the notes:
-obviously I used nectarines rather than plums
-For vinegar I used Sarson's clear pickling vinegar to create the fruit pulp, but your trick from another chutney recipe of using balsamic for the other half of the vinegar later
-I only had green cardamoms to use (crushed) for the spice bag
-I gratered in about an inch of fresh ginger.
Trying your recipe with peaches today.
I have added your suggestions to the recipe. Please take pictures as you cook Winton, we could do with a few on this recipe.

My brother from India (you might have seen him at the Covent garden) and his wife had your chutney tonight. They also said that it was delicious :-).
Thanks Mamta, glad the chutney meets with continuing plaudits. Hopefully with your 'seal of approval' other readers will be encouraged to give the recipe a try:

I made the recipe with peaches (and dates instead of sultanas,) some for Muslim friends for Eid ul-Fitr. This turned out well too - wish I could email you some!
Thought this might make you chuckle:
I sent a link of a 'photo of us meeting at Kavey's stall to a friend in Hong Kong to whom I had recommended your site. He replied very impressed, saying 'fancy you getting to meet an international celebrity chef in Covent Garden!'
Is Mamta an international celebrity chef? If so then I never knew that.

Ha, ha, ha!
I didn't know that either, LOL!!! No I have had no food training whatsoever, except from my mum. I have picked a lot of things along the way as I grow older. I am not a chef by any stretch of imagination, my profession was medicine actually, believe it or not!
