I just posted an enquiry about using Quinces and then thought has anybodygot any thoughts about using Medlars?

They are probably going to be good as a pickle or chutney.

Medlars;

Make a spicy chutney;Apple (or Other Fruit) Chutney, Nana's

or

Apple, Sweet Red pepper & Habanero Chilli Jelly. This is very nice on a fresh, hot and crisp toast.
