I'm pretty happy with the curries I cook. However if I freeze the 'overs' (rarely, there are some!) I find they can dry out a bit, meat can get go bit tough and of course vegetables can loose firmness.
I'm having an informal dinner party and would like to find dishes of any sort that will reheat well. Any ideas anybody?

I leave some leftover meat in the fridge for use in things like risotto and Singapore noodles.
Things cooked in Indian sauces vary in how well they re-heat. Stewed beef doesn't fare too well with re-heating, I find.
Madhur Jaffrey's Goan-style pork re-heats wonderfully, on the other hand.
Yoghurt-based sauces don't fare too well with re-heating, I think.
Sweet red pepper sauce seems to re-heat alright.
I think that chicken re-heats better than pork or beef, depending on the dish.
I'd rather not freeze and re-heat, but I hate throwing food away, and sometimes there's just not the time to cook in the evening, when I'm dashing here there and everywhere.

I make a lot and following Mamta's tip take half out before its fully cooked to freeze and reheat another day. The other half I cook fully to eat and 'test' that day.

If you are re-heating from refrigerated rather than frozen, there should not be any problem. I do this all the time these days, because cooking on the day of the party tires me out too much. Don't do any garnishes/additions of cream etc; the final touches, leaving them for just before serving. Vegetable bhajies are best when cooked fresh, but meat curries, chicken curries, matar paneer/palak paneer refrigerate and freeze well, even taste better next day.
What you can do is fry onions/make curry gravies, chop all your vegetables; do the fiddly bits the day before and just finish up on the day. Vegetable tikki/chops, kebabs like tings can be made in advance and reheated on a tray in hot oven.
