I had a friend who used buy them when cheap, take all the pulp out and freeze it in portions, to be used later in the year. If they are half ripe, they might not be suitable for a chutney.

If you do decide to make a chutney, try this. It can be adpted to mangoes I am sure. It is very easy and very, very tasty. I have adapted it for my taste, but I made it with apples.

Being difficult, the mangoes are both ripe and green, i.e. green skin but already ripe with yellow flesh (suitable to have with a dollop of ice cream!) but much firmer than the smaller bright yellow ones that tend to fall apart when cut, and too sweet for my liking.

This was exactly the sort of recipe I had in the back of my mind but had no idea of the ingredients or method. Monday afternoon will be Chutney making time! Many thanks

What I meant was that it is not suitable for making chutney from ripe mangoes, but you can try.

After all the excitement I think I'll risk a small batch of chutney. I've got some cooking apples which could make up part of the fruit weight. Besides I adore the smell of chutney cooking, it really takes be back to my childhood.

Saw your mango & yoghurt dessert - I've made something similar but never with the spicing, so certainly will try some. At this rate I'll be down the market trying to source some more. Thanks
