Whats the 1 tbs of ghee or oil used for? I cant really see that it needs it?

the oil is for 'oiling the hands' when shaping kebabs. I have made it clearer, see step 8. thanks for pointing it out.

I used water on my hands. These went down very well (even with non-indian, spice eating people). I made half the batch on skewers and half the other half as little burgers. I used 500gms mince so needed to add some more bread crumbs as there was no way they were going to stay stuck on the skewers, they were a bit to floppy. As always it was great fun making and cooking something new. Will definately do them again.
