I looked in my Rajasthani cook-book too, it isn't there. When I was in a boarding school in Pilani, more than half a century ago, we used to get bamboo pickle sometimes with a meal and sometimes with a mathari snack; it was delicious. I must ask my SIL who lives in Jaipur, if she makes anything out of green bamboo. She cooks a lot of traditional Rajasthani dishes.
