why is it when i make my own yoghurt that it ends up slimy? i have been making it on and off for a few months and the thickness and flavour is absolutely fine it is just more slimy than the one you buy in the shops. is this normal or could i be doing something wrong?

what i do is boil some full fat milk and allow it to cool until warm enough to add a tablespoon or two of the yoghurt from the last batch. i give it a stir and pour it into a glass jar put the lid one wrap it in a tea towel and leave it in the airing cupboard for about 9-10 hours.

I don't think anyone knows definitely why sometimes yoghurt gets slimy. It may be something to do with the difference in the culture or perhaps milk not fully boiled for making it. I would suggest that you try buying a new and different make of bio or active yoghurt pot that says 'set' yoghurt and perhaps use UHT milk.

Mine too gets slimy sometimes. I just change the culture next time.

Lapis, do you have any scientific answers?
