Hi,
If I'm cooking a typical curry for a family of 3, what is the minimum amount of oil I can use?
I want to be able to cook the spices properly and not compromise too much on flavour.

you could probably get it down to a couple of tablespoons but would have to modify cooking methods a little, so you can keep an eye on things and do more moving about in the pan. As long as you have enough oil to cope with the amount of spice (ie not leaving dry spice in the pan) then you will be ok. To be honest I use olive oil for making everything (except a few deep fried things and yorkshire puddings) and tend to just put enough in to stop things sticking..

I agree with Steve, you can usually get away with very little oil. In case of meat/poultry, you can always spoon off the oil from the top once the curry is cooked and has rested for a bit.
