As long as you have enough oil to cope with the amount of spice (ie not leaving dry spice in the pan) then you will be ok. To be honest I use olive oil for making everything (except a few deep fried things and yorkshire puddings) and tend to just put enough in to stop things sticking..

I agree with Steve, you can usually get away with very little oil. In case of meat/poultry, you can always spoon off the oil from the top once the curry is cooked and has rested for a bit.
