I made this with small lemons and limes. On my windowsill in sunny Ireland in March/April it was ready in four weeks. Delicious!!

One of my favourites, simple and tasty. I have one on my window sill as I write. It is ready to eat, but I wont eat it for another 6 months or so. The reason is that older it is, better it gets and I have plenty more of different ages to finish before this one :-).

Oh, I think I'll have a go at that this weekend. I'm almost out of my Patak's lime pickle.
Won't be doing your yummy green tomato chutney this summer, Mamta, since the whole family is off to New Zealand for July and August, and I can't rely on house-sitters to water the tomatoes sufficiently regularly.
I'll try this pickle out on my brother when he visits in late June.
