I was wondering if anyone could give me an idea how long the cooking stage of the lamb passanda recipe will take? (I.e. not including the marinading part).

That is a difficult one to answer, it depends upon the cut you use. Good quality, marinated lamb usually takes between 35-50 minutes on simmer. This is after it has come to a good boil. But I will suggest that you don't be guided by the clock, look and test the lamb to make sure it is cooked. The fat usually swims to the top of a meat curry when it is ready, apart from meat becoming tender.
