Hi,

One of my Indian cookbooks contains a few pages about curry powders and pastes and includes recipes for garam masala, curry paste and tikka paste. Some of the main recipes in the book then use these ingredients.

But there are a few main recipes that include as ingredients pastes like Kashmiri Masala Paste, Sambhar Masala Paste and Rogan Josh Masala Paste. However, the book doesn't include recipes for these pastes. Now I think I could probably buy a jar (eg Patak's) of these pastes from my local supermarket. But I was wondering if anyone has a recipe for Kashmiri Masala Paste, Sambhar Masala Paste or Rogan Josh Masala Paste so that I could make my own rather than buy it.

Thanks

Chris

hi Chris there is a mix for Kashmiri Garam Massala on this site but its not a paste (you could just add oil to it)

It seems odd the book suggests using ingredients that it doesn't explain somewhere!

As everyone makes there own masala mixes slightly different it could be different to what they are making.

Hi Chris

I am sorry I missed this posting! Getting old I think ;-)!

I tend not to use pastes. Masala powders last longet than the pastes anyway. As AskCy says, I have Kashmiri masala & Sambhar Masala recipes here on site, also recipes for making Rogan Josh from scratch. Perhaps that will help you?

Thanks for the replies. Seems best to use the recipes on this site and then put a bit of oil in as well when the main recipe calls for paste.

I know Kashmiri cooking well, but don't recollect any pastes. Spices are added either dry, or as ver, a kind of dry spicy onion cake. You don't mention the book (best not to!) but I can't help but think it is not the best for you. If you want to 'role your own' then a more Indian cookbook is what I would recommend.
