I seem to have become overstocked with jalape?os in jars (already sliced and kept in water/vinegar/salt/sugar) - obviously due to my gullibility in falling for supermarket "special offers."
They will keep but any ideas for incorporating them into Mamta's recipes?

You could add them to almost any bhaji/curry/salad/pizza/Mexican dishes John. They will be especially nice in vegetable bhajies I think.
And of course you can always add them to omelets and scrambled eggs!
I presume you already have too much chilli sauce as they would work well for that...

Do you do raclette?
I wonder whether they might work with that, instead of gherkins and pickled onions?

Phil, I've not tried but looking at various recipes I would have thought it would be an innovative and tasty alternative.

Winton: i'll give it a go with pickled green chilli peppers, which we get here in France.
Since we also have pickled gherkins and onions with raclette, it might work, but maybe it's a mix too far, given that raclette is Swiss?

I'd have thought that Jalape?os would work well in a lot of Indian dishes, but not sure about pickled ones though. They may be nice added to various raitas - or to Mamta's Karella Bhaji dish!
My Rocoto plant now has some ripe peppers on it, so I may experiment and try using a couple of those in an Indian curry over the next couple of days. They have a great flavour to them and can be quite spicy too.
