How do you mean, different in batter or the filling?
Few popular and quick pancakes are made from Besan, Mung dal, Semolina, Utthapam 1 and Utthapam 2.
Pancakes are callled ?Chilla? in north India, may be you will find more recipes on the web if you look for chilla recipes.

Just wondered if a OO flour or similar would work. Rice flour's not so easy to get.

Most Indians will soak and grind the rice in a blender, if they did not have access to flour ;-)! In fact, this is what most of us do most of the time. Rice flour just makes it easier.
My mum also used to make sweet pancakes; Meetha Chilla/Dosa. This recipe is from my elder sister, a great vegetarian cook.
I guess you could fill any filling of choice, no reason why not!
It might be a bit difficult to be able to spread 'rice only' batter. You may need to add 3:1 rice:urad dal to get a spread able batter or add an egg.
