Pancakes are callled ?Chilla? in north India, may be you will find more recipes on the web if you look for chilla recipes.

Most Indians will soak and grind the rice in a blender, if they did not have access to flour ;-)! In fact, this is what most of us do most of the time. Rice flour just makes it easier.

My mum also used to make sweet pancakes; Meetha Chilla/Dosa. This recipe is from my elder sister, a great vegetarian cook.

I guess you could fill any filling of choice, no reason why not!

It might be a bit difficult to be able to spread 'rice only' batter. You may need to add 3:1 rice:urad dal to get a spread able batter or add an egg.
