I got a stand mixer to knead dough. I heard about something called 'over kneading dough' when making bread loafs. Is it true for the rotis too? Does kneading the dough for longer time(in mixer) has any effect in the softness or quality of the roti/chapati? I am using 100% whole wheat flour for the dough.

Chapatti dough does not need to be kneaded too much. Just knead it to get it smooth and soft and then leave for 10 minutes or longer. Just before making chapatties, give it a quick knead again and that is it. When using a processor to knead it, make sure that you don't get carried away, otherwise gluten in flour will make it very 'stretchy' and difficult to roll out thinly.
