Just been given a huge amount of chicken breasts and want to make something healthy yet tasty for two for tea...got no inspiration today...any ideas welcome xxxxx

I know, I love coconut based curries but worry that they could be too fattening also butter chicken too...again tho im looking for something healthy! So a nice rich sauce dont mind heat but not rich on the calories! Dont know if its possible! xx

The two with cream/ coconut milk probably not AS healthy as the others, but always find home-cooked food healthier than restaurant versions.
Lucky you !! I wish somebody would donate me huge amounts of chicken breasts with a few legs of lamb thrown in. I would feeze them and at leisure cook curries, tandoori chicken, chicken tikka, lamb tikka, etc..... Oh Nice dream, please don't wake me up!!!
The only abnormal amount of food I have been given was dozens of trout that had somehow got electrocuted on a fish farm!
I was eating them until I had trout coming out of my ears and I grown aprominent dorsal hump.
You can make curry (Kavey has already suggested a few ideas) enough for two meals, today and then in a couple of days. With the rest, make tandoori chicken and freeze portions for two. For freezing, slightly undertook it, so that you can reheat and brown it before you eat.
I am always freezing leftover tandoori chicken. Kavey and Pete had some for lunch today, leftover from day before yesterday!
If they are fresh enough, you can freeze a few in portions for two, I would use sandwich bags for this.
Many for your kind suggestions... I ended up making mums curry was lush! Was a hit with the old man too.. I think I will make the tandoori chicken today and freeze the rest..xxx
