firstly,even when i've rolled them into smooth balls..they tend to open up or crack,while frying.

secondly, they don't soak up the syrup till the centre...they look really nice and all soaked up...but when u cut it open..some of them are dry inside.

I hope you can help me figure out what im doing wrong.

Perhaps your gulab jamun dough is too firm. Make it softer next time and roll it into very smooth balls. I have made them with Gits and they come out very well.
