Recently, I bought a packet of Mathris from Reliance Food Mart. I found in it a packet of green chilli achar made in Rai. In it the chillis were not cut into cylindrical pieces but long chillis 4 to 6 inches long were split midway and stuffed with masala. Since it was for ex-shelf sale, I am sure that it was not of short shelf life.
I found it just delicious and want to try to make it. Looking up recipe of 'Chilli Pickle Hot - 1' in your website, perhaps it is similar though in different shape, and may be without some of the ingredients like sounf and ajwain.
Can you guide please?

This Chilli Pickle Hot - 1 from Abha didi is very good, I make it all the time. You could just slit the chillies, you don?t even need to stuff them.
If you are using the fat, finger chillies, then you could slit them and stuff them using our little sister Reeta?s recipe; Stuffed Chilli Pickle 2
As far as things like saunf, ajwain or kalaunji seeds are concerned, you can add them or not, as you wish. Abha didi?s recipe is really easy and I would recommend it. It is ready within a week.
Geeta also makes very nice seasonal chilli pickle (Rai ka Achaar). If you ring her, she will not only give you her recipe, she will be too happy to make you a large jar ;-)! If she gives you her recipe, let me have it too, please.
