They are not supposed to double in size, just balloon up. The only way you will get them crisp is to fry them on low heat, slowly. Believe me, I know, because I have made the same mistake as you in the years past, fried them in too hot oil and too fast, because I was impatient. Then they will become soft like poories. Don't be impatient, fry them very slowly.
