Hi,

I've seen reference to Gold or Silver foils in various recipes, mainly to Rogan Josh. Has anyone any experience with these foils - do they add anything but presentational value ? Are there any other foils or special decorative coatings?

Regards,

Martin

Hello Martin

Silver and gold leaves are indeed used a lot in Indian sweets and some rich main courses like biryanies/malai kofta curry etc.

They are very thin, beaten silver. I use them now and then; Almond Burfi, Other burfi variations.

there is some mention of gold leaves in Ayurvedic medicine, but I am not sure if this is true.

They do make the sweet/dessert look very nice. Buy from a reputable place, there are a lot of fakes around. I usually buy mine from India.

I don't mind silver foil in barfi and other foods, but havn't seen gold foil in any of them till todate (maybe i havn't been to posh halwai's as yet...LOL!!). Yes, gold is used in ayurveda and my dad takes it now and then.

Gold is used only to order, for rich guys I guess! It is not uncommon to see silver varak on rich, nutty kofta curry type of foods and several rice dishes, especially sweet rice (meethae chaval). You must have seen it in hardwar/Dehradun restaurants Rajneesh, even not so posh ones :-)

Thanks to everyone who contributed to this thread, Am I right in thinking that the generic name for edible foil is varak ?

Excusing my ignorance,

Hindi name for the edible silver leaf is indeed Varak. It may have other names in other languages within India.
