Adding turmeric is optional. Turmeric is a health giving spice, so you can add it, especially if you like a darker yellow colour and flavour of turmeric. Many 'bhujias' have turmeric, many don't. As for spices, that is a personal choice. I have eaten it mostly with salt and chillies, but there is no reason you cannot add more chillies, garam masala, amchoor etc. You can even add flavour by adding a little dry methi leaves to the dough.
