Hi,

I was thinking of making one of the fish curries today but only have frozen fish. I wanted to know if this was ok to use and if so wether i should add it frozen or defost it first.

Thanks,

Mark

Frozen fish is fine, but I would defrost it fully first.

Hi Mark

The curry should be fine with frozen fish(I've made it before.)

I thawed out the fish first on the basis I didn't want lots of iced water melting into the curry gravy and it just seemed more 'safe' cooking wise.

I have just cooked the fish from frozen but i added less water to the curry to allow for the fish being frozen.

I do not usually cook fish so i hope this will be ok safety wise?

It tastes absolutely beautiful by the way!

Mark, as long as you make sure that it's heated for long enough that the deepest bit of the fish pieces get truly hot hot hot I'm sure it'll be fine!

Which one did you make?

Hi Kavey,

Thanks for the advise, i assumed it would be fine as i did make sure it was piping hot.

I ended up choosing: Fish Curry - Reena's (Spicy)

I added a couple of green chillis, some fresh coriander and i skipped out the yogurt (i always tend to get bad results when cooking with yogurt, guess i just dont like the taste it gives!).

The curry was delicious - highly reccomended.

It is a great dish, isn't it? The recipe comes from SIL's cook in Delhi.

if you cook from frozen, there is a risk of over cooking the outside if ensuring the inside is hot. Meat like this cooks by conduction, the heat reaches the inside by passing through the outside, the longer you need to cook the frozen bit, the more it is likely to spoil. Fish needs a few minutes a side if in a water based liquid, or even frying.
