I wonder if we can freeze fresh tomatoes (chopped) to be used in cooking curries later on??. I believe frozen tomatoes can't be used in salads as they will be discoloured and slushy?.

I freeze them whole.
The reason is this:- When I then take them out of freezer, I leave them for a couple of minutes. So just the outer millimetre or two has defrosted. I can then slip the skin off very easily because the rest of the tomato is still frozen. It's a very easy way to skin the tomatoes! One's fingers get cold but that's not a big deal!
And the skin protects the tomato when it's in the freezer!
Oh great !! I will freeze them whole, but Kavey why would you want to take the tomato skin off ?
If I'm using them for cooking sauces, which is the best use for frozen/defrosted tomatoes, the skins can sometimes be a little thick/ tough. Some tomatoes have very thin skins which I'd leave on but other varieties are a bit too thick my liking and I don't like finding bits of them in my mouth!
Isnt this site great. Every time I come here I learn something new. I wish I'd known about mamtas tom sauce and now being able to freeze tomatoes towards the end of last summer. I had that many toms I couldnt give them away. I had bucket loads. Unfortunately most went into the compost bin. Thanks all. Its coming spring here now and my tom seedlings are almost ready to go into the vege garden.
