The reason is this:- When I then take them out of freezer, I leave them for a couple of minutes. So just the outer millimetre or two has defrosted. I can then slip the skin off very easily because the rest of the tomato is still frozen. It's a very easy way to skin the tomatoes! One's fingers get cold but that's not a big deal!

And the skin protects the tomato when it's in the freezer!

Isnt this site great. Every time I come here I learn something new. I wish I'd known about mamtas tom sauce and now being able to freeze tomatoes towards the end of last summer. I had that many toms I couldnt give them away. I had bucket loads. Unfortunately most went into the compost bin. Thanks all. Its coming spring here now and my tom seedlings are almost ready to go into the vege garden.
