Yep its spring onion time and I have bunches of it. I've seen a web site that says you can freeze spring onions. Chop them first and put in a container in the freezer. My question is, if I made the recipe in the below link would the texture of the spring onions alter after being frozen. Will they become mushy as their cells break down due to the temp? Have anyone any experience with freezing them?

I have frozen left-0ver bhaji. They do go a bit soggy, just like many other green vegetables when frozen, but are okay...ish. They can always be use as a filling for things like a Frankies or for stuffing Parathaslike this or for stuffing Green Peppers or making Stuffed Potato Snack etc.

Hope this helps!

PS Do you sow them all together or in fortnightly batches? I mean to do that every year with my salad things, but often don't. Coriander is the only thing I manage to sow every month in summer :-), and sometimes fenugreek.
