I do use a zip lock or self sealing bag. After placing chapatties in it, I close the zip/seal to almost full, squeeze the air out and then seal completely. Another way is to seal it almost completely leaving a drinking straw inside. Then suck the last bit of air out and seal as you withdraw the straw.

Yes, stuffed parathas freeze too, but I will recommend a piece of baking parchment or Aluminium foil between each.

I make poories so rarely that I don't need to freeze them! I am sure they can be frozen easily and successfully, because they stay fine in a fridge. You will have to defrost completely, perhaps even give them a 20 second blast in the microwave too, so that you can peel them off easily. Try it with a small sample first.

It is always a good idea to freeze these things in portion you will use in one go.
