You can try freezing it and see if it works;

Peel, chop lauki. Add to boiling water and blanch for 1 minute, maximum. Immediately drain out the water and dunk it in a bowl filled with iced water. Drain and freeze on a tray. After a few hours, pick up individual, frozen pieces and keep in a plastic bag. If you don't do this, they will all stick together. It should work. Try defrosting after a couple of months and see how it cooks.
