Hello Colin

I have frozen almost all meat and chicken curries at one point or another as leftovers. Most meet curry taste pretty good after freezing-defrosting-heating, but obviously not the same as when fresh. They are nice enough though. Yoghurt based curries are generally okay, if you use full cream yoghurt in cooking. Skimmed milk yoghurt can split. Full cream one may occasionally split on re-heating, but usually doesn't. Chicken curry is okay but if made specifically for freezing, slightly undercook, so that it doesn't disintegrate when re-heated.

Biryanis freezes quite well. You have to be careful with rice though, cool it quickly and then freeze. Rice lying around at room temperature can cause food poisoning problems because of Bacillus cereus. Look up the details on the internet.

Bacillus cereus is a facultative anaerobic bacterium, meaning it can exist in air and in anaerobic conditions, and it forms spores, so it can get us all ways.

So, if one wants to save rice for another day, one needs to cover it, but not seal it with cling film before cooling and refrigeration.

When I was doing my Master of Science degree in Environmental Biology, most of the samples of natural water I tested contained B. Cereus, easily identified as they grew in patterns like feathers, photos on Google don't do them justice.
