Many thanks to Winton for the link re fish and chorizo soup: never heard of it before! We now do fish soup and also a Spanish seafood stew: wonderful stuff.
I've never had the courage to attempt bouilabaisse, but we have a go at French fish soup in the summer, when the supermarket seafood stalls here have a 'soupe de poisson' section, with half a dozen different fish soup fishes.
i find that fish soups vary immensely in their taste and texture.
