I think you will find recipes that don't use them, but some recipes wouldn't be the same without them !

I guess that ground fenugreek seeds, when cooked, smell very 'indian', but you needen't use them. You can use fenugreek leaves, or ground fenugreek seeds, or both, depending on the recipe. Check out fenugreek chicken on this site.

Since I buy and dry my own fenugreek leaves, meaning they are fresher than packed ones and better flavoured, I have loads of them. I tend too add them to many dishes where I have not mentioned. They even go in my breads!
