Hi,

i am about to use your egg free fruit cake recipe for an engagement cake. The customer has also request it to be alcohol free. Do you have any idea what the 'shelf life' is for this cake? I will cover it in marzipan and fondant anyway but not sure how long it will last.

It is such a long time since I have made this cake. For an important occasion like that, I would recommend that you make a trial one first, a small one.

I couldn?t tell you how long it will stay, it never lasted that long when I made it!

I too am making an Engagement cake that will be an egg free fruitcake although I have been able to soak the fruit in alcohol.

The bottom tier was baked on 3 days ago and I am now worried that the cake will be stale for the party in 4 days time. I will be baking the top tier tomorrow. What conclusions did you reach with the "shelf-life" of the cake? Thanks for any tips you may suggest.
