Try this one Egg Curry. Do not add chillies or garam masala, which should keep it ?soft?. Towards the end of cooking time for the gravy, before you add eggs, add you creamed coconut, either powder or from a creamed coconut brick. Simmer it until coconut mixes well with the gravy and then add the eggs.
My favourite "egg curry" Is what I think is called Chicken Murgh Massala ?
Where you get a mince meat based curry with chunks of chicken and boiled eggs all together.

Yes, some people do add mince to their meat curries, and it tastes quite nice, but can be very rich.

I just typed a reply for you, but it was lost during posting. I am in India at present and Internet where I am is a bit temperamental!
Chicken=chicken, Murg=chicken, Masala=Spice mix or ?cooked in a spice mix?. So, it can be any type of chicken curry cooked in any selection of spices. It is difficult to say which dish exactly it is that you had eaten and are referring to. Try going through the recipe of these two and see if they sound familiar;

The curry I've had from a local takeaway was a minced meat(lamb) curry which was pretty hot and had fenugreek leaves in amongst other spices, not a lot of tomato or veg, chunks of chicken and boiled eggs sliced in half, topped with fresh corriander leaves

there's always the Indian 'nargisi kofta', what in the UK would be called 'scotch eggs'. Usually arranged with a spinach based curry, the end result, arranged correctly, is supposed to look like the nargis flower, a kind of chrysanth', I think.
