Dear Mamta, thanks for a great site! I love Indian food, and I have learnt a lot from your recipes and advice.

I have two fresh legs of lamb, which I would like to turn into one or several curries. I just wondered if lamb curry freezes well? If so, are there some types of curries that will freeze better than other types? Or would you recommend that I instead cube the meat and freeze it for future curry making?

Thanks a lot.

Hello Penny

Thank you for your kind comments.

Yes, lamb curry freezes very well. Just make sure that it is not over cooked, otherwise meat might become too soft when thawed and re-heated. I have frozen most curries at some point, they all freeze well. Cook the one that is most popular with your family, then do variations with spinach/methi leaves /red wine etc.

You can freeze cubed meat, as long as it is fresh lamb and not defrosted one.

You can also make; whole leg in spices for a sunday roast.
