When you come across curry leaves in a dish, is it okay to eat them or are they just meant to be there for flavour only?

I only use dried curry leaves as that's all I can easily get. I cut as much of the stalk off as possible and either use for cooking or crumble finely over a salad. Not sure what you are supposed to do but we always eat them.
No harm in eating them, but after it is cooked in a curry its job is done, I prefer not to eat them as there is not much flavour left in them.
I don't think the texture is conducive to eating them, really but I doubt they'd do you any harm... try one and see if you like?
