Hi Mamta - ive an abundance (and I mean an adundance) of home grown zuchinis (courgettes). Ive found your courgette and ginger pickle but I was wondering if you know of any more? I make a mango pickle and was wondering if I could replace the tart sour green mango with zuchini? Wouldnt be the same though would it?

Pickling Courgettes and other courgette recipe ideas
You can use this pickle recipe for pickling most vegetables that can be eaten uncooked. Presence of vinegar in it will give you tartness.
Or, you can use the ground mustard recipes like this courgette and ginger one. Ground mustard helps to ferment/make it tart. This type of recipe is used in India to make all sorts of vegetable pickles. You can add a little vinegar to it as well, which helps to preserve.
This type of onion, vinegar, sugar chutney can be made using most fruits and vegetables, including courgettes. I have made it with courgettes, it is quite nice, but I have not written it down.
Courgette Koftas or Nargisi Koftascan be made and frozen. They are very nice in curry, as well as a snack. If you under-fry them for freezing, you can freshen them up with a quick re-fry before serving.
Courgette Pancakes are delicious, I love them.
How about some Piccalilli?
You could make some cakes, like carrot cake, and freeze. Can also be added, grated or small chunks, to bread dough.
And then you could make almost any vegetable curry/bhaji recipe with courgettes.
If you make pickles, I would love to have your pictures and amounts of ingredients used; it will save me writing it down LOL!
