I noticed the other week that after spending time in the kitchen with all the spices, herbs, oils and heat that I found the curry I was making rather bland (almost to the point of flavourless), however everyone else said it was really good!
The next day I had some more that had been left over and this time I could taste it properly. and it was indeed a tasty curry.
Makes me wonder if a lot of cooks/chefs out there are adding too much salt etc to meals because they have become desensitised to the smells and tastes while cooking!

Interesting point, never thought of it like this. I am not sure if it is true though. Most curries taste better next day anyway ;-)! That is why I often make curries the day before a party, leaving only vegetable bhajies on the day. I think it works like marinatineg, more time for flavours to mingle perhaps.

Oh I agree the curry matures and gets better and better, but this was definately not being able to taste many of the ingredients that I know should have stood out.
I've spoken to a few people about it and its mentioned that food always seems to taste better when someone else cooks it... maybe this is why..!
