I knew we would end up with some left... actually 2 puddings as no one really likes sweet stuff in our house but you still buy some just in case.
Any ideas what I could do with it ?
My best ideas are cut it up into little cubes and mix it into icecream ?
Maybe cut little lengths and roll in puff pastry to create a sweet sausage roll ?
but then I'd still have to find someone to eat it...lol

I made mine into ice-cream last year and this year (it's on my blog).
I chopped the pudding, soaked the pieces in brandy for a few hours then dropped them into churning vanilla custard, towards beginning of churning.
The alcohol also helps to keep the ice-cream soft scoop rather than freezing utterly solid in the freezer.
In my head it sounds great, but I just can't imagine us saying "right lets have some icecream"...
I'm hoping for something savoury with it to be honest.. lol

Savoury? With Christmas Pudding? Cut it into pieces, coat in besan batter and make Pakoras LOL!!
Someone used it for a stuffing for a roast bird I think.
It might still be there somewhere on Matthew Walker site from last Christmas, a competition to come up with recipes using pudding, some were definitely savoury.
But I must say, I loooove the ice-cream. Hence making it again this year.

I like icecream from time to time but if I've still got a little spot to fill after a meal I'd prefer more potatoes/rice/bread/crackers rather than a pudding though... lol

Well, when you can have jams with chilli, why not samosas with christmas pudding filling. Come to think of it00583646">Sweet samosas you know.
If I wasn't suffering (full of some horrible cold that more than anything is killing me with my throat, on painkillers and such)
I think I'd have to make samosas with a spicy chutney.. I'd bet they would work well, you wouldn't know if it was a pudding or savoury, and I'd bet they would be moreish !
