Just planning one now, anyone got ideas for something nice and spicy?
I always find it a bit rich but I adore the spices...
Cheers x
I've never made my own (mainly down to the fact that we don't really go for sweet things and most of the family don't like Christmas cake at all).. but I wonder if you could give it a kick with chilli and dark chocolate in there ?
Steve
Not a great fruit cake maker either. Although Mamta has a nice sounding recipe on-site: http://www.mamtaskitchen.com/recipe_display.php?id=12923
You could double up on the mixed spice, perhaps add some chopped up crystallised ginger stem with the fruit? Steve's idea of the chilli is good - I have put a good dose of tabasco in cakes & it worked well.
Final tip - if you are going to ice the cake use a lemon icing (otherwise I find it just too sweet!)
Tabasco in cake, now that is a thought!
Dellia always makes exceedingly good Cakes in my view, so her Christmas cake should also be good; www.deliaonline.com/recipes/cuisine/european/english/the-classic-christmas-cake.html
I don't make fuitr cake very often, because I am the only one who eats it around here! I might make it this year though.
Mamta
Thank you very much for your replies.... tobasco sounds a bit too crazy, but Im going to bump up the mixed spice and ginger!
cheers again x
I have made my Christmas Fruit cake now and it has come out quite tasty (I made a smaller one to eat now)!
Mamta
On reflection probably good idea not to risk tabasco in a fruit cake, given the time and expense of making it - just try a few drops on a slice when you've made it!
Tabasco does work in chocolate cakes and cheesecake though.
hey everyone, well i made my chrissy cake... and a tester too! it went well down with the lads at work... ironically Mamta the Delia Smith programme was on the other night! I loved her idea of the creole christmas cake!
Just gonna keep on feedin it with brandy etc now... so fingers crossed, I might be able to have a slice on christmas day, but however theres never enough room after the lunch, yorkshire puds and too much chocolate! ( and some bevvies) X
Hey ho, you never know there might be some room after the bubble and spueek on boxing day!
Thanks again,
xxclairexx
Mmmmmm .. Bubble and Squeak: think I actually look forward to it with pickles and chutneys on Boxing Day more than the actual Christmas Day meal!
I look forwards to the brussels sprouts more than anything else !
