I can't see any yogurt to substitute! Coconut water instead of the water could be an interesting twist. Or was it a question for the recipes in general?

I haven't used yoghurt in the rceipe on the site, but it can be used in place of tomatoes or as a part substitute.

Coconut will be good, will give it a south Indian sort of taste. If you are going to add coconut, may I suggest that you use mustard seeds in place of cumin seeds at step 6. If you have a few curry leaves, add them here too. It will then be a south Indian style of 'tarka' or tempering.

If you make it with coconut, do take a few pictures and send over, we may be able to post them here.
