I little insight into what goes on in my kitchen/head !

Having had chicken satay from a takeway I thought about it and wondered if I could do an easy version...

Then thought about the fact I'm not a big fan of peanut butter and we don't have any in, but we do have Tahini (seasame seed paste/sauce) and I love that..(it tastes a little peanutty)

So I set about with one large chicken bread, cut into slithers, wound onto wooden skewers.

Then took all the dry ingredients and ground them in my little grinder, added all the wet ingredients and mixed up.

Brushed all over the chicken and put in a roasting tray, into hot oven for about 10mins... took out and gave a good squeeze of lemon juice.

chicken satay

1 Large chicken breast

1 tsp Mustard seeds

1 tsp onion granules

1 tsp smoked paprika

1 tsp sea salt

? tsp black pepper

? ground ginger

2 star anise

2 tsp runny honey

1 tsp garlic puree

3 tbsp Tahini

1 tbsp Dark Soy sauce

1 tbsp worcestershire sauce

1 lemon

although they tasted great, look ok in the photo it turned out to be a pretty poor recipe.

It created too much waste in the roasting tray, the sauce dried up more than I'd expected and wasn't left with anything to dip or slop about..

Its a starting point but I'd think it will take more work and need 2 parts.. one cooking a flavoured chicken part, and another creating a sauce to pour over...

anyway thought I'd share that with you...

I hesitate about satay, and hate peanut butter, but spicy satay can be good, if it's not too peanut-laden.

Keep us posted, Steve: if I could do a decent spicey satay, I'd have a go.
