I know it doesnt say so at step 4, but wouldnt you brown the chicken with its marinade for a little while before adding the water and then putting the lid on?

It is probably too late for you, chicken already cooked, but just got up and saw your mail. You could brown/seal the chicken Steve, but it doesn't seem to make much difference to the end result.
