hello,
I want to know what is chicken bouillon, how to use this in indian style currys.
thanks
Bouillon is essentially a french word for stock.
You can make stock at home (usual technique is to use bones/carcass leftover from some other dish using the meat, add water, a few vegetables such as onion, carrot etc. and some herbs, often in a little packet called a "bouquet garni"). Boil and then simmer gently for quite a long time, strain out all the solids and the remaining liquid is the stock or bouillon.
Alternatively, you can buy stock cubes or granules which consist of concentrated and dried stock. Add to boiling water according to their instructions.
thank you for your reply ,it seem i can put this in every dish specially vegitable to improve taste.
Hi Shazad
I can seee you are not fond of vegetables ;-)! How can you improve the taste of vegetables, most of which are already perfectly delicious in my humble opinion! Just kidding, you add away the stock to vegetables, if that makes them nicer for you :-).
You can make good chicken stock, either by using a carcass, as Mamta suggests, or, better still, by using an old boiling chicken (in French, a poule), in the usual manner suggested by Mamta. It's SO much better than chicken stock cubes.
When using bouquet garni, try to use fresh herbs, if possible; we use fresh thyme and bay leaves from the garden.

Vegetable stock helps well in some dishes as it gives even more flavour. If you are making a simple dish (maybe just a side serving of green beans in butter and garlic) putting stock in would change the flavour and consistancy of the dish completely so don't just add it to ever dish with vegetables in.
Also be aware that different manufacturers have different flavours to their stock cubes / liquids / powders so you might want to try a few different ones to see which you prefer.

Phil, I know we're all destined to become our parents when we get old but I'm not my mother yet! ;)
Oh dear! Sorry!
I'd like to think that this was a minor slip, but maybe it reflects my seeing my wife becoming her mother as the years go by. On which, no comment!
