Took me a moment to work that one out as I am planning to give the recipe a try tonight.
It is simply all the dry spices listed in the recipe ingredients from ginger powder down to chilli powder inclusive just mixed together!

Yes the dry spices have* on the end of them so you know they are part of the list

Ok, that makes sense. I just thought it was an ingredient because it was shown in the list of ingredients that's all.
Just finished the Chicken Bhuna recipe Steve - very tasty with a lovely combination of spices. Went down the fresh ginger and garlic route and with the arrival of an unexpected guest put in a chopped green pepper which seemed a good addition although not sure how authentic this is!
sounds great, like any other recipe there is always room for improvements, tweaks, changes and dietry omissions...

Winton, there are not hard rules about what you add to your dish. That is the fun of cooking your own. In restaurants, they would have given it another exotic name, so that they could sell it as two dishes; 'Chicken Bhuna Saada (Plain)' and 'Chicken Bhuna Shimla Mirch Masala' etc. ;-)!
Shimla Mirch is another name for green pepper/capsicum in India.

Thanks Mamta - agree if we didn't experiment and improvise there would be no recipe development and we just as well print off your web site and send it to the printers! On the other hand I do try to stick to the recipe the first time I make it, to taste what the author originally intended, and then tweak it on subsequent cookings.
