Has anyone got a really nice recipe for Chettinad Chicken? Can I ask does Chettinad go well with red meat or vegetarian dishes? It's adequately spicey with chicken but might not suit either of these.

are you asking whether the recipe for Chettinad chicken can be adapted for red meat or veg?

Indian cooking is not 'cook in sauces' type of cuisine, for great recipes the ingredients chosen and methods developed for a particular reason.

AFAIK, Chettinad chicken is designed for chicken. If you want to use red meat, try another recipe designed for red meat. Same for veg.

Would you use fish to make a steak and kidney pie?
