Might sound like an odd question but I recently heard that in India people also eat the leaves from around a cauliflower, is this true?
Absolutely true, they are delicious; Cauliflower Greens and Stalks Bhaji (Dry Curry). I never throw leaves and stalks away, if they are fresh and crisp. Cooked with pickle type spices, they are really nice.

if the younger leaves are left on the whole gobi, they help maintain its structure (it doesn't fall apart so easily).
I use them when making soups (along with all the other things like hearts of cabbages, stalks from brocolli etc)

Yes, we also cook dry cauliflower curry with some of its leaves as well.
I love cauliflower so I am going to give that cauliflower leaf bhaji a try later. I have occasionally used the leaves for making stock but never thought of eating them like a vegetable.
You can eat many other leaves that we normally throw away;

There are many more, for example Bangladeshi people cook courgette/pumpkin type of leaves. Everyone knows about cooking flowers, but not many people use leaves.
When you use cauliflower leaves, don't forget other similar leaves too. Radish seed pods also taste very nice;
