I'm going to try your Lamb Biryani recipe at the weekend, it looks very good. I noticed that the list of ingredients calls for "Large Cardamoms" and "Green Cardamoms" and in the instructions at step 3 it says that I should crack the "Brown and Green Cardamoms". On the "Spices of India" website I can only find Black and Green cardamoms but not Brown or Large cardamoms.
Can you please tell me where I can get Brown and Large cardamoms from?

I think the recipe will be using "black cardamons" which are actually brown in colour and compared to the green ones are much larger.
So its probably Black (usually for savoury dishes) and green (mostly for sweet dishes but also savoury) cardamons that you require.
I've jumped in to answer as Mamta sometimes can't get to the computer straightaway so you might have to wait for her to reply properly !

I think there are only three varieties of cardamom anyway: green, brown/large, and white. Green and brown are used mostly in Indian cooking and white are quite rare to find and are sometimes used in Thai cooking.
Some people think that white cardamoms are just green cardamom that have gone old, this is not the case. White cardamoms do exist but sometimes the green ones are bleached somehow and are sold as white cardamom.
