I use convection mode.

Are you using too much baking powder? For instance if you use self-raising flour AND baking powder the cake will rise beautifully then sink dramatically (there is not enough 'structure' on the cake to maintain the rise.)

Are you repeatedly opening the oven door to 'see how it is doing'? If so the oven might not be getting to the required temperature.

Take a 'failsafe' recipe such as the recipe for Lemon Cake on this site. Follow the instructions exactly. If that doesn't work there could be something wrong with the oven. Check with an independent oven thermometer if you have one.

Does your oven book give a cake recipe? If yes, it is worth trying their recipe first and then adjusting your timing accordingly.

Are you in India (this is an Indian oven, isn?t it?) and are you by any chance using old baking powder/flour? It might be worth writing to the company and asking them about your troubles, telling them the things you have already tried that haven?t worked. Usually big companies are very helpful about their products. My younger sister lives in Noida and has a combi oven. She makes pretty decent cakes and breads in her oven, but I can?t remember which oven she has. So, the problem may be with the oven not regulating its temperature well. I am no cake expert, these are just a few suggestions!

check with a bought temp gauge from any cook shop.

the temperature for most cakes sponge based ones tend to be around 180C...for a 8" tin for about 30-45mins some cake are lower and cook for longer like fruit cakes or heavy cakes containing fruit pulp type of cakes.

I am not familiar with the name you mention. Have u tried silicone baking containers? They are great, nothing ever sticks.
