Hello. I grow cabbages and potatoes in my garden and am wondering if I can combine them to make a vegetarian Indian dish. In particular, I wonder if it?s possible to make a kind of aloo saag, but with cabbage instead of spinach; aloo saag was my favourite dish when I used to eat in Indian restaurants in London a lot, years ago. It was a moderately ?wet? dish - not dry, but not really with a gravy either.

Hello Mat

You can make a lovely Cabbage and Potato Bhaji . This is a dry (without gravy) vegetable dish. You can cook similar bhaji by adding peas/carrots/peppers etc. to the cabbage. These bhajies can be used to make 'toasted sandwiches' or 'parathas', the Indian pan-fried, flat bread. To make parathas, follow the recipe for Cauliflower Paratha , simply using cabbage bhaji, instead of a cauliflower filling.

If you put cabbage in this site's search window, it will give you 20 recipes using cabbage.

Aloo Saag is here .
