I would like to know how to avoid the burning of cookies at the bottom. Everytime I make cookies,it burns at the bottom though it is nice on top. Another question I have is if we should increase the baking time if I am using a non stick pan. I tried to bake jeera cookies in the non stick tray and it took longer to bake it properly.

I would appreciate any advice.

Thanks.

I've done a bit of research on the very useful baking911.com website. The colour of the baking tins, rather than whether or not they are non-stick, is more likely to affect the baking time. Cookies on a dark cookie sheet will cook more quickly. I've never heard of non-stick trays slowing down cooking.

It's more difficult than it might seem, without being in the kitchen with you, or knowing the exact recipe, to work out why your cookies burn on the base, while the tops seem just right. It could be one, or more, of several reasons:

Baking.911 suggests greasing trays with oil rather than butter, as butter burns at a lower temperature. Better still, use a piece of baking parchment or silicone sheet.

As suggested above, if your baking sheets are dark coloured, you could try lowering the temperature by 10C.

If you are using the same cookie sheet for second batches, make sure you cool them first, as warm trays will cook the bottoms faster.

Are you baking your cookies on a flat tray, with no built up sides? If you are using something like a brownie or swiss roll tin, with deep sides, then this might prevent the heat getting to the tops of the cookies, so they are slower to cook than the part in contact with the tin. So the base is burnt by the time the cookie is done.

You might simply be misjudging when the cookies are done, and leaving them in the oven too long. Are you cooking them for much longer than the recipe suggests? Some cookies are meant to be still very soft when they come out of the oven - they harden up as they cool. Take the cookies out of the oven before the bottoms burn, and see if they are properly cooked when they cool.

If you have a gas oven, is the tray too close to the flame? This would heat the tray too much and could burn the base of the cookies. Try cooking higher in the oven, or using smaller trays which don't go so near to the flame.

If none of these suggestions apply, perhaps you could let me know more details of what recipe you are using, and how you are cooking them.

Thanks for this Sue, I knew you will have some sensible suggestions :-).

One thing I found in the early days of my baking cookies is that they didn't look cooked to me, when they actually were and when the recipe time was up. I found that they continued to cook for a minute or so, even after removing from the oven, perhaps because they were sitting on a hot tray. Secondly, they 'set' as they cool, I didn't have to keep them in hot oven until they set.
