Hi, am curious...if I want to make boondi raita, can I make it ahead of time? For e.g. for a dinner party, can I make the boondi raita that afternoon or would it get soggy?

I can't see any reason not to make the boondi's (stages 1-7) and chilled raita (8) beforehand. Then combine (stages 9-11) just before serving.
